A recipe to celebrate the vernal (spring) equinox and/or Easter

Recipe Steps

1. Put eggs in cold water, bring to a rolling boil, then take off the heat. Add green tea and leave to cook for 10-15 minutes. Let the eggs cool down a bit, then peel them. If you're using quail eggs you can leave the shell on - it's edible.

2. Combine the seeds, Botanico mix and dried flowers. Grind using a mortar and pestle or an electrical spice grinder. Roll the egg in the mixture until it gets a seedy crust. If you are using quail eggs with shell, cut the eggs in half and press the flat part in the seed mixture.

3. Arrange the eggs on a serving dish. Sprinkle with chives and (dried) flowers. Serve with mayonnaise, sour cream or cottage cheese
